Blueberry & Banana Muffins
2 c flour1 c sugar
1/2 tsp baking powder
1/2 tsp baking soda
1/2 tsp salt
1 c blueberries, or more if you prefer!
1 mashed banana
2 eggs
6 oz sour cream
1/2 c oil
1/2 tsp vanilla
a bit of milk as needed
Combine dry ingredients in a large bowl. In a separate bowl, mix the eggs, sour cream, oil and vanilla. Add into the dry ingredients just until blended. Fold in the fruit. Add a bit of milk if needed to moisten more. Pour into muffin cups. Bake at 400 degrees for 18-22 minutes, until browned and a toothpick comes out clean.
Makes about 18 muffins
Have you tried buttermilk or yogurt in place of the sour cream? I have not seen a banana blueberry muffin recipe before and I think it would be a great way to use up overripe bananas. Thanks.
