My husband requested
Mexican Cornbread Casserole for dinner this week. I've made it one other time and it was so delicious, but this time I decided to play with the recipe. It's seriously soooo yummy! I highly suggest you check out the recipe I came up with. This dish is different from your run-of-the-mill casseroles and is sure to please everyone (though you should alter the spiciness to appease the palates in your house).
