Memorial Day Cheesecake {or 4th of July}

This past weekend I made a Red, White, and Blue Cheesecake to honor those who died while serving our country. Annndddd because my husband and I love a good cheesecake. G, we found out, scoffs at the very sight of cheesecake--too bad for her.

I found the recipe in my Taste of Home magazine from last summer. I've got a collection of magazines on our end table and the cover of this particular one always drew my attention--that is, until the baby tore it up. At first I tried to alter the crust to make it part graham cracker and part dough....let me tell you, this failed miserably. I forgot to factor in that graham crackers already have fat (butter) in them, and I didn't alter the amount of butter in the crust recipe. Luckily, I caught the problem prior to filling it with the cheesecake batter. I redid the crust exactly as the recipe says.

The next time I make this cheesecake, I plan to try it with a homemade Oreo crust because I think that would kick it up a notch (although...then it doesn't look as patriotic).
