Menu Plan Monday

So last week was really nice... I had an easy meal plan, I went out with a friend, my sister came to town, I celebrated my birthday, and my husband's work had two evenings of parties.

I'd say the food highlight of the week was the homemade ice cream cake that my husband made for me. It is a-mazing! It got even better the second time we had some. He based his recipe off of a few ideas he found online; layers of vanilla ice cream, Oreos & chocolate syrup, cookie dough ice cream, whip cream, whoppers, fudge sauce.

Here's our meal plan for this week:

Monday: Applewood Salmon (BOGO 4 oz fillet at the grocery store this week), Salad, Baked Potato
Tuesday: Leftover Scallop Pasta (my birthday dinner), Salad
Wednesday: friends are making us dinner
Thursday: Pre-made Manicotti with homemade Italian Sausage Sauce
Friday: Crab Salad, Cheese & Crackers
Saturday: Leftovers
Sunday: Crock Pot BBQ Chicken, Sweet Potatoes

  4. Looks like a good week of dinner's. :-) Can't wait til my hubby is back home so I can start making yummy food again. Just not the same cooking for just yourself and a 2.5 yr old. LOL.
