Menu Plan Monday


Last week's meal plan wasn't very intense...but our week was...so that meal plan wasn't even looked at (aside from making the chili). We were sick Monday - Wednesday, so didn't eat a lot--and then we just scrounged around the other nights. It happens. :-) Remember that meal planning should come with a little flexibility because life is unpredictable!

Here's our meal plan for this week:

Monday: Homemade Meatloaf & Homemade Mac/Cheese, with salad - dinner with friends (they're bringing cake balls for dessert)
Tuesday: leftovers
Wednesday: Pork Chops, Rice Pilaf, Salad
Thursday: leftovers
Friday: homemade pizza <3
Saturday: Chicken & Rice Casserole (no condensed soups in this recipe)
Sunday: shrimp cocktails, toasted ravioli, & other finger foods

I think I need to start looking at my food magazines...I'm definitely in an uninspired cook mood. I blame the weather!

  1. Sounds yummy! We have homemade pizza and meatloaf on our menu for the week too! Great staples. :-)

    1. Haha! They are totally my go-to's... especially homemade pizza (happens almost every week!) Have you ever had cream cheese on pizzas? It's so amazing--we add it to ours!

  2. After Lucia was born, we got meals from David's labmates. One of them brought a Mexican cornbread casserole that was really good and I got the recipe, so I'm going to try it this week. I also made a ton of coconut curry yesterday so we'll be having the leftovers at least two nights.

    1. Yum! Mexican cornbread casserole sounds delicious! I'll have to find a recipe for that on the web...but we aren't big coconut or curry people around here :-)

      I rarely use things from a box, if that's what you mean by homemade...but I do plan our meals...so that part is planned too...

  4. i love using pinterest to help me plan meals, i pin recipes i see that look good then go back to my board when i'm meal planning to pick which ones to make. if i like it i move it to my 'tried and liked' board. if not, then i delete it. I post my meal plans now on http://mudhutmom.blogspot.com/
