Well, my meal plan last week went all haywire... I cook for like 5-6 people, but there are only two of us eating, and food still lasts longer than I think it will. I'll get better one of these days. I've also found I don't really need to plan for breakfast or lunch, they work themselves out.
Speaking of breakfast, last week we had yummy rich banana bread all last week. I posted my personal (adapted) recipe here. We also had some amazing peach cobbler last night, and you can find my recipe (from my mom) for that here.
Monday: Homemade Pepperoni & Mushroom Pizzas (never got made last Friday, leftovers lasted longer than expected)
Tuesday: G & I are out of town, so the husband gets leftovers (choice of leftover ribs or chicken alfredo)!
Wednesday: We'll be getting back very close to dinner time, so I'll just scrounge something up.
Thursday: Chicken Enchilada Casserole & homemade re-fried beans (our fave!)
Friday: left overs
Saturday: pork roast, potatoes, veggie side
Sunday: Pasta & Turkey Meatballs
